The Bayou Classic 2.5-gallon Bayou Fryer heats from the inside out, not from the bottom. The back mounted jet burner blasts hot air horizontally through hollow inner tubing that is immersed in cooking oil. Heat transfers from the metal tubing into the center of the oil to keep batter from scorching while in use. This design enables you to re-use your oil many times and reduces cost. The stainless basket with a cool touch handle is 11 Inch by 7 Inch by 3 Inch. It is a free standing unit that comes with 2 sets of legs that bring the unit to waist level or down to a table top unit. The bayou fryer also has a built in drain, a large thermometer and a 10 PSI regulator with control valve and stainless braided hose.
