• Tortellini with spicy chipotle cream sauce

    Pasta! The best ingredient when you’re in a hurry, like I was! Fix a quick sauce (spicy chipotle cream sauce) and cook the pasta (tortellini), mix it up and your fast food dinner at home is ready! And so much better than any other fast food, plus cheaper too!

    Of course pasta is also good when you’re not in a hurry, like the recipe for luscious pasta or the red wine and meatballs (spaghetti and meatballs recipe)! Just saying…

    But back to this tasty dish, about the chicken meat. Always, ALWAYS keep your chicken leftovers in the freezer. At days like these you’re going to need that meat! Now all you have to add is some mixed greens for a salad (one needs veggies too… ) and you’re eating within let’s say 20 minutes! Unfortunately I didn’t had very much chicken in the freezer, but that little bit I chopped into tiny pieces. It’s the thought that counts!

    The recipe:

    1 small onion, minced

    1 large tomato, cut into pieces

    1 chipotle (from a jar with adobo sauce), minced

    1 teaspoon adobo sauce (skip this if you’re not into very very spicy hehe)

    1 tablespoon tomato paste

    ¼ cup red wine

    1 cup shredded chicken meat (rotisserie or from the bbq) (optional)

    1 teaspoon dried Italian herbs

    ¼ cup cream

    1 package (fresh) tortellini (I used the ones stuffed with cheese/tomato)

    Grated Parmesan cheese

    Olive oil

    First, have a look at the cooking instructions on the package. How long does it need to cook? Mine only needed 4 minutes. Keep your cooking time in mind while preparing the sauce!

    Heat a wide pan and add some olive oil. Add the onion and cook for 5 minutes on a medium heat until they’re soft. Then you can add the tomato and chipotle. Give this another 5 minutes. Then it’s time to add the adobo sauce and tomato sauce. Give this 2 minutes.

    Don’t forget your pasta!

    Pour the red wine in the sauce, and bring to a boil. Let this simmer for 5 minutes.

    Add the chicken, herbs and cream to the sauce and let it simmer on a low heat until your pasta is ready and drained. Add the pasta to the sauce and mix it all together, carefully with the pasta!

    Time to eat! Add some grated parmesan cheese to the pasta and dig in!
