Spring is in the air! Beautiful weather means it’s time to get out your grill and start grilling. The recipes are endless when it comes to grilling, but here is one of my all time favorites, Hawaiian Chicken Kabobs, served with grilled corn on the cob, and grilled asparagus.

Ingredients:

1 Large White Onion cut into cube slices
1 Red Bell Pepper cut into cube slices
1 Green Bell Pepper cut into cube slices
1 Orange Bell Pepper cut into cube slices
1 Can of Pineapple Chunks
1 Small container of Button Cap Mushrooms (washed and de-stemmed) cut in half
1 Package of 4 boneless chicken breasts
Your choice of marinade
I used World Harbors, Asian Style, Sweet Chili Marinade and Sauce, 16oz Bottle (Pack of 2)
and World Harbors Island Style Mango Sauce
A package of kabob sticks

Directions:

First you will need to soak the kabob sticks in water for about a half hour. This will help the sticks from splintering, as well as burning once on the grill.

Now you can start cutting your bell peppers, onions and mushrooms, also you can drain the pineapple from the juice. I cut all my vegetables in 1inch cubes, discarding the seeds in the peppers and the stems on the mushrooms.

Next you can start slicing the chicken. I trimmed away any fat I could see, and sliced that into 1 inch cubes as well.

Now you can start the fun part, of putting your kabobs together!! You can do any pattern, or no pattern at all. I like my kabobs colorful, that’s why I chose three different colored bell peppers!

After your kabobs are put together you can put them in your favorite marinade. I used World Harbors Sweet Chili Sauce and I also used World Harbors Island style Mango Sauce. I marinated a few kabobs in each sauce to try out the different flavors. The sweet chili sauce was a little spicy, so if you don’t like spice I would recommend using the mango sauce.

Let your kabobs sit in the marinade for at least two hours, the longer the more flavor!

When you are ready to start grilling place each kabob on the grill for about 15 minutes flipping them occasionally.

Once the kabobs are finished cooking you can remove them from the grill, I drizzled some more of the marinade on top of the kabobs (optional) plate, and enjoy!
